The Oysters
Sourced locally, our baby pacific oysters (seed) are raised in the nursery at our Kellidie Bay lease. This lease provides the calm waters that are rich in nutrients the seed require to survive life outside of the hatchery.
Once the oysters reach 30 to 40mm in length they are large enough to be transferred to our longnose lease in less protected waters. Here the oysters grow and develop a stronger muscle that prepares them for their next transfer once they reach 60 - 70mm. This final transfer is to a lease with rougher water that provides exceptional tidal movement bringing with it a constant food flow.
The result…an A grade oyster ready for market.

Oysters are filter feeders, they draw water into their shells, where the gills trap and filter out plankton and organic particles.
This process not only feeds the oyster but also significantly contributes to maintaining the clarity and quality of the marine environment around it.

On average our oysters take 18 months to 2 years to grow from seed to saleable size.
During that time the oysters are graded approximately every 8 weeks.

Farmed Pacific Oysters have naturally high levels of many nutrients which contribute to a healthy lifestyle.
Oysters are a good source of Omega 3 and a source of iron and magnesium.
